We first came across this recipe through @mersgoodeats on TikTok and immediately loved the balance it offers. They’re soft, lightly sweetened, and easy to prep ahead – perfect for when you want something grounding after a workout or in a hurry.

Healthier Blueberry Muffins
Ingredients
- 1/2 cup unsalted melted butter
- 1/2 cup honey
- 2 eggs
- 1 tsp vanilla extract
- 2/3 cup plain Greek yogurt
- 1/2 cup whole milk
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 cup frozen blueberries
Instructions
- Preheat oven to 220°C and line a muffin tin with paper liners.
- In a large bowl, whisk melted butter and honey until smooth. Add eggs and vanilla extract and mix well.
- Stir in Greek yogurt until combined.
- Add the remaining dry ingredients to the wet mixture and mix until almost incorporated.
- Add the milk and stir just until combined, then gently fold in the blueberries (or toss the blueberries with 1–2 teaspoons of the flour in a separate bowl first to prevent sinking.)
- Divide batter into the muffin tin and top with extra blueberries if desired.
- Bake at 220°C for 10 minutes, then reduce heat to 175°C and bake an additional 15 minutes, until a toothpick comes out clean.
- Allow muffins to cool before serving.
