We first came across this recipe through @mersgoodeats on TikTok and immediately loved the balance it offers. They’re soft, lightly sweetened, and easy to prep ahead – perfect for when you want something grounding after a workout or in a hurry.

Food isn’t about restriction – it’s anything that supports energy, skin, and overall wellbeing. Having a refined-sugar-free option ready in the kitchen removes decision fatigue and helps keep habits feeling effortless rather than forced.

Healthier Blueberry Muffins

Makes 12 muffins | Prep time 10 minutes | Cook time 25 minutes

Ingredients

  • 1/2 cup unsalted melted butter
  • 1/2 cup honey
  • 2 eggs
  • 1 tsp vanilla extract
  • 2/3 cup plain Greek yogurt
  • 1/2 cup whole milk
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup frozen blueberries

Instructions

  1. Preheat oven to 220°C and line a muffin tin with paper liners.
  2. In a large bowl, whisk melted butter and honey until smooth. Add eggs and vanilla extract and mix well.
  3. Stir in Greek yogurt until combined.
  4. Add the remaining dry ingredients to the wet mixture and mix until almost incorporated.
  5. Add the milk and stir just until combined, then gently fold in the blueberries (or toss the blueberries with 1–2 teaspoons of the flour in a separate bowl first to prevent sinking.)
  6. Divide batter into the muffin tin and top with extra blueberries if desired.
  7. Bake at 220°C for 10 minutes, then reduce heat to 175°C and bake an additional 15 minutes, until a toothpick comes out clean.
  8. Allow muffins to cool before serving.

Mix until smooth before adding your eggs and vanilla extract. Mix then add your greek yogurt and mix again. Add your dry ingredients to your wet and mix until almost incorporated. Add in your milk and mix together before you add your blueberries in. Once your batter is combined add it to a lined muffin tin. Top with additional blueberries. Bake on 425F for 10 minutes then reduce the heat to 350F and bake for an additional 15 minutes. Once cooked and cooled your muffins are ready to enjoy!
